Amaranth
Spinach

Spinach prefers cool conditions and fertile, well-drained soil around pH 6.5-7.5. Add compost and a modest nitrogen feeding for vigorous leaves; heat and long days trigger bolting, so prioritize cool-season crops and steady moisture.

- Full sun to part shade
- Water
- Even moisture; about 1 in/week including rain
- Spacing
- 4 in

Tips
- Sow 1/2 inch deep and thin to 3-6 inches apart, choosing soil below about 75°F for reliable germination.
- Keep the seedbed moist and supply about 1 inch of water weekly after emergence.
- Use insect mesh to exclude leafminer flies and remove leaves containing active tunnels.
- Provide airflow and avoid overhead watering late in the day to reduce leaf disease.
- Pick outer leaves when large enough to use, leaving the center intact, or cut the plant before bolting.
